The past month has seen the completion
of the first two houses at Croydon Vineyard Estate.
Three more will soon be complete and ready for occupation.
Watch this space for further news and more pictures
as time goes by. Builders are invited to send us pictures
of their homes for inclusion in the newsletter each
month and include their contact details.
If you have been on site recently you will have noticed
that the neighbouring Croydon Olive Estate is under
construction. This development’s infrastructure
will be complete by the end of 2007 and it signals the
commencement of several developments that are in process
in the Croydon vicinity.
Members of the home owners association were last month
that the AGM will be held on 30th September 2007. As
this is a Sunday and during school holidays this date
will be revised and you will be advised shortly. Formal
notices will be posted to members prior to the meeting
to confirm this date and we will also provide this information
in a newsletter. Members will be invited to stay for
a spit braai afterwards.

This is a limited amount of Title Deed 2005 and Covenant
2005 still left for sale. If you would like to place
an order for 2005 wines (in addition to your allocation),

The first thing to think about is the placement of this
rich collection. There should definitely be no direct
sunlight; preferably the wine should be in a dark place.
Garages and kitchens are not recommended as there is
too much temperature fluctuation and human activity,
as well as odour. Bottles should not be disturbed too
much either, especially when it comes to red wines that
develop sediment. A well-ventilated area with no vibrations
and a constant temperature is best.
The wine should be placed on its side, or at least at
an angle so that the cork is in contact with the liquid.
The inside of the cork is not to dry out, as it will
cause the seal to be ineffective. Fortified wines other
than Port should be left standing upright.
Temperature plays an important role in the process.
The location of your storage should be between 10 and
15 celsius. Consistency plays a role, so try to keep
it constant.
Humidity also plays an important role. Just as you don’t
want the inside of the cork to dry out, you don’t
want the outside to dry out either. If the seal becomes
ineffective, the oxidants will cause the wine to become
like vinegar. You need about 70% to 75% moisture in
the air.

of course able to select your own signage company, and
